Basic Baubilt Bread

Many people have tried the outstanding no-knead bread recipe adapted from the Sullivan Street Bakery, published in the New York Times (at least twice) by Mark Bittman, and the subject of a lot of follow-up traffic on the internet.

I tried each version of the recipe as it became simpler. Bittman now claims 5 minutes of labor to make a loaf. I think I’ve got it down to half that. The crux move for me was discovering a teflon-coated ceramic baking dish that can serve as the single receptacle for the entire process, including mixing, rising, and baking. The dish I have is shown here along with the finished loaf. It’s available from Amazon for $39.99. (No, I’m not a shill for the manufacturer. Yes, I do get 80 cents if you buy one from Amazon.)

Baubilt Bread Recipe

  1. Place teflon-coated baking dish on a digital kitchen scale and press “tare” to zero scale.
  2. Add 600 g of flour to the dish.  (I dump some white flour in and then dump in some whole wheat flour, aiming for about 1/3 whole wheat, but I’m not fussy about it. Mix in 2 teaspoons salt and about 1 teaspoon dry yeast. (Folks, it doesn’t really matter how much yeast you use… 1/2 t to 1 T will work fine; the critters multiply like crazy.)
  3. Press “tare” again to zero scale.
  4. Add 540 g water. (The precise values don’t matter…what does matter is the ratio, that you add 90% as much water as flour by weight…a so-called 90 percent hydration dough….really wet by bread dough standards, which is why this recipe has such nice bubbles and doesn’t require kneading.)
  5. Mix the dough until it’s a uniform consistency (just a few strokes to get everything mixed thoroughly).

  • Let the dough rise in the covered dish for 5-10 hours, with 7-8 hours the ideal, depending on temperature. Mine rises at about 70F, the temperature in my kitchen.

  • Turn your oven on and set to 500F.  Stir the dough to “knock it down.” The dough will be pretty gooey. Wipe off the edges/sides of the dish to remove any dough residue so it doesn’t burn to a crisp in the oven. Put the lid back on and let the dough rest/rise while the oven preheats.

  • Put the covered dish in oven and turn the oven down to 450F.  Bake for 45 minutes. (The initial 500F jolt is to make up for skipping Bittman’s step of pre-heating the pan, etc.)
  • Remove the lid and bake for another 15 minutes (or until the internal temperature of the loaf, via an instant-read thermometer, 200F).
  • Turn the baked bread out on cooling rack. (It should fall right out of this pan.)
  • Using a Plain Old Pan

    Of course you can bake bread without a teflon-coated ceramic baking dish. Before getting my baking dish I used a plain old 6-quart dutch oven (a stainless and aluminum model from Sur La Table with metal handles). But, you’ll probably need to use a bowl for steps 1-7 and then flop the ball of dough into a well-oiled pan before baking. I’ve never tried using a plain metal pan from start to finish, but I’m guessing the bread will stick badly to the pan if you try that approach. You do need to use a pan with a good lid, although I suppose foil might work.

    Further notes:

    Yes, of course different flour types give different results. I use plain old U.S. all-purpose flour plus Trader Joe’s white whole wheat flour, but I’ve used all kinds with good results. The bread is sinful with 100 percent white flour. One third whole wheat provides a veneer of nutritional respectability without much compromise in yumminess.

    I use grams on the scale because the units feel nice and precise to me.  I realize I’m mixing imperial and metric units. Sue me. A digital scale is a good thing to have in a kitchen, but if you don’t have one, then measure out 5 cups of flour (about 625 g) and 19 oz. water (563 g, which is 90% of 625 g).

    An instant-read thermometer is better than timing the baking. Let the final (uncovered) phase go until the internal temperature of the bread is 200F.

    Ponoko Laser Cutting Service

    Ponoko is a web-based business offering laser cutting from almost any file format. This service can be used to make fussy parts with complex curves. For example, I needed to prototype a three dimensional component and made the basic structure with interlocking pieces of plywood. Here is a sheet of the pieces as they came from Ponoko. To minimize costs you try to nest as many parts as you can on a sheet of material. I fit nine sets on this piece. Ponoko offers lots of materials. I drew these parts in Adobe Illustrator, but almost any drawing tool can be used, even Powerpoint, I think.

    Here you can see the parts going together to form a three-dimensional structure. I glued the parts together with Gorilla glue and the structure was super strong and very precise.

    Polywhat? Interior Wood Finishes

    These are my opinions on interior wood finishes. They are based in part on science, logic, and my own experimentation. They also rely somewhat on the testing and writing of others, although since I am a myth buster and skeptic, I believe very little of the conventional wisdom.

    Finishing wood for interior applications serves the functions of (1) protecting the wood (mostly from liquids) and (2) enhancing the appearance of the wood. First, I’d like to dispel some myths.

    Myth 1: Urethane and acrylic finishes give a “plastic” look to wood.

    The plastic look people are referring to when they assert this claim is the result of high reflectivity or “gloss.” It is just as accurate to say that wood that is finished with a high-gloss surface has a “wet look” or has a “glass look” (indeed, these adjectives are sometimes used to market wood finishes). Surfaces are glossy when they reflect a lot of the light that hits them. Sure, wood can be imparted with a glossy finish with urethane or acrylic coatings. But, oil finishes, lacquers, shellacs, waxes, and other finishes can also be glossy. Furthermore, most finishes are available in low-gloss versions, usually called “satin.” So, the “plastic look” and the type of finish that is used on the wood are really two separate issues. As a technical aside, virtually all wood finishes are polymers (molecules comprised of long chains of carbon and hydrogen molecules), which is a technical term that includes all “plastics.” In fact, wood itself is a polymer (cellulose).

    Myth 2: Finishes derived (recently…not prehistorically) from plants (e.g., tung oil, linseed oil) are less hazardous, more environmentally friendly, and/or less “plastic-y” than finishes derived from petroleum feedstocks (e.g., most urethanes and acrylics).

    Folks, all of these finishes are polymers, meaning they are comprised of long strings of carbon and hydrogen atoms, usually with some oxygen atoms thrown in. Most of these finishes (except for water-born acrylics) are suspended in an organic (i.e., carbon-based) solvent of some kind. The ones derived from plants smell at least as nasty and emit at least as many volatile organic compounds (VOCs) as the ones derived from petroleum. Of course, most carbon came from plants at some point in the past…which is why I distinguish between “recent” conversion from plants that grew a few years ago and conversion on a geologic timescale (e.g., petroleum).

    I am willing to bet that if one were to do an environmental lifecycle analysis of a quart of conventional petroleum-based urethane wood finish and compare it to a quart of some exotic tung-oil-based finish, the urethane would probably come out ahead. Why? Because it is made from materials that were extracted very, very efficiently, made in a very efficient factory, and transported to your workplace very efficiently. The environmental footprint of the original feedstock from which the finish was made is probably pretty much irrelevant. Consider that roughly speaking a gallon of petroleum can make somewhat less than a gallon of wood finish and somewhat less than a gallon of gasoline. Your drive to Home Depot and back to buy the wood finish therefore probably consumed more petroleum than was used to make the finish itself.

    So, while initially I was very intrigued by the “natural” finishes like polymerized tung oil, I have become increasing convinced that the environmental, health, and aesthetic attributes of various finishes are nearly independent of whether or not the finishes are “natural” (i.e., are made from raw materials that were derived recently from plants). “Natural” is not always “green.”

    With those rants out of the way, what have I learned about the most obvious wood finishing options?

    Short version:

    • If you want a very quick finish capable of developing some gloss, use a water-based acrylic finish (e.g., Minwax Polycrylic). This stuff dries in 1-4 hours depending temperature and humidity, is available in various sheens, is inexpensive, washes up with soap/water, smells pretty nice, and holds up quite well. (I was shocked to see my very good interior painter, a real master at finishes, using this stuff on a stair rail. The rail looks and works great five years later.)
    • If you want a finish that penetrates a bit deeper, imparts more contrast to the grain in the wood, and is a little tougher, then use an oil-based polyurethane finish. I like the Minwax Wipe-on Polyurethane quite a lot. It’s cheap, looks great, and dries in 3-6 hours depending on conditions. Various urethanes are also available in brush-on formulations. I like the wipe-on version because it has quite low viscosity, so is easy to apply, and seems to penetrate the wood very well. The wipe-on version does not show any brush marks and can be applied with a rag, so you don’t have to clean up a brush with turpentine. (Wear latex or vinyl gloves, though, to avoid having to clean up your hands with a nasty solvent.)

    Longer Version:

    First, the most important variable in determining finish quality is your care and patience. Basically, to get a great finish, you need to start with wood that is sanded very smooth (with at least 220 grit sandpaper). You must also apply thin coats of your finish, let them dry thoroughly between coats, and sand with very fine paper/pads between coats. Realistically it takes two days of elapsed time to put even a basic finish on wood, even with a “fast drying” acrylic finish.

    The key really is good prep and sanding between coats. Your first coat of finish is hopefully penetrating the surface of the wood somewhat and forming a composite layer of cellulose and the polymer that develops when the finish dries. You are then going to sand that layer to be very smooth using 220 grit or finer sandpaper. (I like to use a green abrasive pad, then a gray pad.) Once you’ve done this, you’ve created the substrate on which you are going to apply the actual layers of protective coating. Another way finishes can go wrong is to sand in the same room as you apply the finish…you’ll get dust on the sticky surface. This is really only a big deal on the final top coat, as you are going to sand between each layer anyway. (You should just wait a few hours for the dust to settle before applying the final coat.) There are many specialized “sealers” or “sanding sealers” that are recommended by manufacturers for the first coat. In most cases these are essentially just thinned versions of what you are going to apply later. Many finishes are thin enough that they work fine as sealers so you don’t need to use a special product for the first coat.

    In an ideal world you would apply several layers of the protective top coat with a HVLP (high-volume low pressure) sprayer. This gives you a nice fine gentle mist of finish on the surface, avoiding brush marks. But, this method involves way too much gear and clean up for me. That’s why I like the wipe-on finishes. They give similar results without the fuss.

    Some finishes I’ve tried:

    • Minwax Polycrylic (available in different sheens) – very fast drying, doesn’t smell bad, cleans up with water, inexpensive. Does not darken wood as much as I’d like. Good choice if time and convenience are critical. (For example, I am installing a 1300 sq-ft wood ceiling that is 24 feet up from the main floor level…I’m using Polycrylics for this…the only thing anyone will notice about this finish is its general color and sheen.)
    • Minwax Fast-Drying Urethane (available in different sheens) – I like the appearance (darkens wood more than acrylics). Dries fairly fast (still requires a couple of hours more than the Polycrylic). This is a brush-on formulation, but has nice low viscosity so goes on nicely. It is an “oil-based” formulation so requires solvents (e.g., turpentine) for brush clean up.
    • Minwax Wipe-On Polyurethane (available in different sheens) – I like this finish a lot. You can use a rag or a brush followed by a rag to rub this in. It is low viscosity, so seems to penetrate wood very well. The satin version is pretty much indistinguishable from a tung-oil finish in appearance. I wish Minwax had a better can, though…seems like a squeeze bottle of some kind would be ideal.
    • Watco Danish Oil Finish – basically a hardening oil finish. Easy to apply. Darkens the wood somewhat, which does enhance appearance. I’ve used this on my workshop butcherblock counters and it’s been fine. It doesn’t seem to persist as a finish indefinitely and I’m not sure why. That is, the surfaces seem to “dry out” after a few years. This has not been a problem with the Sutherland and Welles tung oil finish (below). I’ve read that Watco has had several owners and that the formulations have changed over the years.
    • Sutherland and Welles Polymerized Tung Oil – a hardening oil finish made from polymerized (i.e., partially cooked) tung oil and a solvent. This is a pretty good oil finish. It does stink. It must be applied in very thin layers (wipe on and then rub off) or the tung oil will not dry in a reasonable amount of time. (Basically, the partially polymerized oil oxidizes and the polymerization is completed causing the oil to harden into a solid…yes, a plastic. This polymerization is inhibited if the layer of oil is too thick.) This finish is expensive and has limited distribution. I understand this stuff is mixed in 8 gallon batches in a shop in Brooklyn…I like the small-business aspect of this finish, and it is the best tung oil finish I’ve tried. But, honestly I like the Minwax wipe-on poly better.
    • Waterlox Original Tung-Oil Finish – this strikes me as quite similar to the Sutherland and Welles finish. I tried the high-gloss version of this. Other than being too glossy for me (yes, plastic-y despite being a “natural” finish), it worked fine. The dry time is not as good as the Minwax wipe-on urethane, and it’s expensive, so I don’t see a reason to use it over the Minwax.
    • Rubio Monocoat – this is a new coating developed by a Belgian company and recently available in the U.S. The manufacturer makes pretty outlandish claims, mainly that this finish can be applied in a single wipe-on coat, and that it protects against water, etc. I ordered samples and tried it. Sorry…it doesn’t work as claimed. It does darken the wood somewhat, enhancing its appearance. It does not protect significantly against water based on my experience. It also has almost no sheen. It’s also ridiculously expensive. Skip this one.

    I realize this may come across as an ad for Minwax. They are a big player and have relatively refined, affordable products. Honestly, I think the reason some of the niche products survive is that there are lots of myths and superstitions about finishes, and because very few people try several different products side by side. In my opinion it is very hard to beat the mainstream options you can find in your hardware store.
